Caribbean Style Mac And Cheese

Ingredients

  • 1 lb elbow macaroni
  • 4 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the macaroni according to the package instructions. Drain and set aside.
  2. In a separate pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, until the mixture is smooth and bubbling.
  3. Gradually whisk in the milk, dry mustard, paprika, salt, and pepper. Continue to cook and stir until the mixture thickens.
