Caribbean Sweet And Sour Shrimp
This Caribbean Sweet and Sour Shrimp recipe combines the flavors of the Caribbean with the influence of Chinese cuisine to create a delicious and unique dish.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, mix together the ketchup, vinegar, brown sugar, soy sauce, and cornstarch to make the sweet and sour sauce. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the garlic, onion, and bell peppers. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Add the pineapple chunks and the sweet and sour sauce to the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
- Return the cooked shrimp to the skillet and toss to coat everything in the sweet and sour sauce. Season with salt and pepper to taste.
- Serve the Caribbean Sweet and Sour Shrimp over steamed rice and enjoy!
