Caribbean Sweet And Sour Shrimp

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, mix together the ketchup, vinegar, brown sugar, soy sauce, and cornstarch to make the sweet and sour sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the garlic, onion, and bell peppers. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  4. Add the pineapple chunks and the sweet and sour sauce to the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Return the cooked shrimp to the skillet and toss to coat everything in the sweet and sour sauce. Season with salt and pepper to taste.
  6. Serve the Caribbean Sweet and Sour Shrimp over steamed rice and enjoy!
