Caril De Abobora E Coco (pumpkin And Coconut Curry)
Caril de Abobora e Coco, or Pumpkin and Coconut Curry, is a traditional dish from East Timor that combines the sweetness of pumpkin with the creaminess of coconut milk, all infused with aromatic spices. This hearty and flavorful curry is perfect for a cozy dinner on a chilly evening.
Ingredients
- 500g pumpkin, peeled and cubed
- 1 can (400ml) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 red chilies, sliced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cinnamon stick
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, ginger, and red chilies. Sauté until the onion is soft and translucent.
- Add the ground turmeric, cumin, coriander, and cinnamon stick to the pot. Stir well to coat the aromatics with the spices.
- Add the pumpkin cubes to the pot and stir to combine with the spices and aromatics.
- Pour in the coconut milk and season with salt. Stir to mix everything together.
- Bring the curry to a gentle simmer, then reduce the heat to low. Cover the pot and let the curry cook for about 30 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked through, remove the cinnamon stick and discard. Taste the curry and adjust the seasoning if needed.
- Serve the Caril de Abobora e Coco hot, garnished with fresh cilantro. Enjoy with steamed rice or crusty bread.
