Caril De Cabrito Com Coco (coconut Curry Goat)

Ingredients
- 2 lbs goat meat, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 tbsp curry powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp turmeric
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups water
Instructions
- Season the goat meat with salt, pepper, and half of the curry powder.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned goat meat and brown on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the onion, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the remaining curry powder, paprika, cumin, and turmeric. Cook for 1-2 minutes to toast the spices.
- Return the browned goat meat to the pot. Add the diced tomatoes, bell pepper, and coconut milk. Pour in the water and stir to combine.
- Bring the curry to a boil, then reduce the heat to low. Cover and simmer for 1.5-2 hours, or until the goat meat is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the Caril de Cabrito com Coco hot with rice or bread.
