Ingredients

  • 500g chicken, cut into pieces
  • 3 potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 400ml coconut milk
  • 2 tablespoons cooking oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Stir in the turmeric, cumin, coriander, and chili powder. Cook for 2 minutes to toast the spices.
  5. Add the chopped tomatoes and cook until they are soft and pulpy.
  6. Add the cubed potatoes and pour in the coconut milk. Season with salt to taste.
  7. Cover the pot and simmer for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Garnish with fresh cilantro before serving.
