Caril De Frango E Batata (chicken And Potato Curry)
Caril de Frango e Batata, or Chicken and Potato Curry, is a popular dish in East Timor cuisine. This flavorful and aromatic curry is a perfect comfort food that can be enjoyed with rice or bread.
Ingredients
- 500g chicken, cut into pieces
- 3 potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili powder
- 400ml coconut milk
- 2 tablespoons cooking oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the turmeric, cumin, coriander, and chili powder. Cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and cook until they are soft and pulpy.
- Add the cubed potatoes and pour in the coconut milk. Season with salt to taste.
- Cover the pot and simmer for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh cilantro before serving.
