Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 inch (2.5cm) ginger, grated
- 2 tomatoes, chopped
- 1 can (14 oz/400ml) coconut milk
- 2 tbsp vegetable oil
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder, coating the chicken evenly with the spices.
- Add the chopped tomatoes and coconut milk to the pot, stirring to combine. Season with salt and pepper.
- Simmer the curry for 30-35 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro before serving.
