Caril De Jaca (jackfruit Curry)

Caril de Jaca, or Jackfruit Curry, is a popular dish in East Timor cuisine. This flavorful and aromatic curry is made with tender jackfruit pieces cooked in a rich and fragrant sauce, perfect for serving with steamed rice or crusty bread.

Caril De Jaca (jackfruit Curry)

Ingredients

  • 2 cans of young jackfruit, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of chili powder
  • 1 can of coconut milk
  • 2 tomatoes, chopped
  • 1 cup of vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the ground turmeric, cumin, coriander, and chili powder to the pot. Stir well to coat the onion mixture with the spices.
  3. Next, add the drained jackfruit pieces to the pot and stir to combine with the spiced onion mixture.
  4. Pour in the coconut milk and vegetable broth. Add the chopped tomatoes, then season with salt and pepper. Stir to combine all the ingredients.
  5. Bring the curry to a simmer, then reduce the heat to low. Cover the pot and let the curry cook for 30-40 minutes, stirring occasionally, until the jackfruit is tender and the flavors have melded together.
  6. Once the curry is ready, taste and adjust the seasoning if needed. Serve the caril de jaca hot, garnished with fresh cilantro, and accompanied by steamed rice or crusty bread.
