Caril De Jaca (jackfruit Curry)
Caril de Jaca, or Jackfruit Curry, is a popular dish in East Timor cuisine. This flavorful and aromatic curry is made with tender jackfruit pieces cooked in a rich and fragrant sauce, perfect for serving with steamed rice or crusty bread.
Ingredients
- 2 cans of young jackfruit, drained and rinsed
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 teaspoon of ground turmeric
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of chili powder
- 1 can of coconut milk
- 2 tomatoes, chopped
- 1 cup of vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the ground turmeric, cumin, coriander, and chili powder to the pot. Stir well to coat the onion mixture with the spices.
- Next, add the drained jackfruit pieces to the pot and stir to combine with the spiced onion mixture.
- Pour in the coconut milk and vegetable broth. Add the chopped tomatoes, then season with salt and pepper. Stir to combine all the ingredients.
- Bring the curry to a simmer, then reduce the heat to low. Cover the pot and let the curry cook for 30-40 minutes, stirring occasionally, until the jackfruit is tender and the flavors have melded together.
- Once the curry is ready, taste and adjust the seasoning if needed. Serve the caril de jaca hot, garnished with fresh cilantro, and accompanied by steamed rice or crusty bread.
