Ingredients
- 1 block of firm tofu, cubed
- 2 carrots, sliced
- 1 large potato, diced

- 1 bell pepper, sliced
- 1 cup green beans, trimmed
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 can (14 oz) coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger. Sauté until the onion is translucent.
- Add the curry powder and stir for a minute to toast the spices.
- Add the tofu, carrots, potato, bell pepper, and green beans to the pot. Stir to coat the vegetables and tofu with the curry mixture.
- Pour in the coconut milk and soy sauce. Season with salt and pepper. Stir to combine all the ingredients.
- Cover the pot and let the curry simmer for 20-25 minutes, or until the vegetables are tender.
