Ingredients

  • 1 block of firm tofu, cubed
  • 2 carrots, sliced
  • 1 large potato, diced
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 1 cup green beans, trimmed
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 oz) coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger. Sauté until the onion is translucent.
  2. Add the curry powder and stir for a minute to toast the spices.
  3. Add the tofu, carrots, potato, bell pepper, and green beans to the pot. Stir to coat the vegetables and tofu with the curry mixture.
