Ingredients

  • 1.5 lbs (700g) beef, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 potatoes, peeled and diced
  • 1 cup (240ml) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 cinnamon stick
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 3 cups (720ml) beef broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant.
  2. Add the beef cubes to the pot and brown them on all sides.
  3. Stir in the curry powder, turmeric, cumin, and coriander, coating the beef evenly with the spices.
  4. Add the diced tomatoes, potatoes, cinnamon stick, and beef broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, or until the beef is tender.
  5. Pour in the coconut milk and simmer for an additional 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the Caril de Vaca hot with steamed rice or crusty bread.
