Ingredients
- 1.5 lbs (700g) beef, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 potatoes, peeled and diced
- 1 cup (240ml) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 cinnamon stick
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 3 cups (720ml) beef broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant.
- Add the beef cubes to the pot and brown them on all sides.
- Stir in the curry powder, turmeric, cumin, and coriander, coating the beef evenly with the spices.
- Add the diced tomatoes, potatoes, cinnamon stick, and beef broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, or until the beef is tender.
- Pour in the coconut milk and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve the Caril de Vaca hot with steamed rice or crusty bread.
