Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 carrots, sliced
- 1 red bell pepper, diced
- 1 cup green beans, trimmed
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 2 tbsp curry powder
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until the onions are translucent.
- Add the carrots, red bell pepper, green beans, cauliflower, and broccoli to the pot. Stir in the curry powder and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring the mixture to a simmer. Let it cook for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
