  • 1 cup green beans, trimmed
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 2 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until the onions are translucent.
