Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1/2 cup water
- 1/2 tsp salt
- 1/2 lb cheese (such as Gruyère or Emmental), grated
- 1/4 cup breadcrumbs
- 2 tbsp butter
- 1 onion, finely chopped
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour, eggs, water, and salt. Knead the dough until smooth, then cover and let it rest for 15 minutes.
- In another bowl, mix the grated cheese with breadcrumbs, salt, and pepper.
- Roll out the dough on a floured surface and cut it into small circles using a cookie cutter or a glass.
- Place a small amount of the cheese mixture in the center of each circle, then fold the dough over the filling and press the edges to seal.
- Bring a large pot of salted water to a boil and cook the noodles in batches for about 5-7 minutes, or until they float to the surface.
- In a separate pan, melt the butter and sauté the chopped onion until golden and crispy.
- Remove the noodles with a slotted spoon and place them on a serving dish. Drizzle with the melted butter and top with the crispy onions.
