Carinthian Yeast Cake (kärntner Reindling)

Ingredients

  • 500g all-purpose flour
  • 1 packet active dry yeast
  • 250ml warm milk
  • 100g sugar
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 100g unsalted butter, melted
  • 100g raisins

Instructions

  1. In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour, sugar, salt, and cinnamon. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour.
  4. Punch down the dough and roll it out into a rectangle. Sprinkle the raisins evenly over the dough.
  5. Roll up the dough tightly, like a Swiss roll, and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.
  6. Preheat the oven to 180°C (350°F). Bake the cake for 40-45 minutes until golden brown.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
