Carinthian Yeast Cake (Kärntner Reindling) is a traditional Austrian sweet bread filled with a delicious mixture of sugar, cinnamon, and raisins. This cake is perfect for breakfast or as a sweet treat with coffee or tea.
Ingredients
- 500g all-purpose flour
- 1 packet active dry yeast
- 250ml warm milk
- 100g sugar
- 1 tsp salt
- 1 tsp ground cinnamon
- 100g unsalted butter, melted
- 100g raisins
Instructions
- In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the flour, sugar, salt, and cinnamon. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour.
- Punch down the dough and roll it out into a rectangle. Sprinkle the raisins evenly over the dough.
- Roll up the dough tightly, like a Swiss roll, and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.
- Preheat the oven to 180°C (350°F). Bake the cake for 40-45 minutes until golden brown.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
