Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- Salt and pepper to taste
Instructions
- Season the beef cubes with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the beef in batches and set aside.
- Add the diced onion to the pot and cook until softened.
- Stir in the garlic, chili powder, cumin, and oregano, and cook for 1 minute.
- Return the beef to the pot and add the diced tomatoes and beef broth.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning with salt and pepper, if needed.
