Carne Con Chile

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the beef in batches and set aside.
  3. Add the diced onion to the pot and cook until softened.
  4. Stir in the garlic, chili powder, cumin, and oregano, and cook for 1 minute.
  5. Return the beef to the pot and add the diced tomatoes and beef broth.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Adjust the seasoning with salt and pepper, if needed.
