Carne de Porco à Alentejana (Alentejo-Style Pork)
Carne de Porco à Alentejana, or Alentejo-Style Pork, is a traditional Portuguese dish that combines marinated pork with clams, potatoes, and a flavorful sauce. This dish is a perfect representation of the rich and diverse flavors of Portuguese cuisine.
Ingredients
- 1 lb pork loin, cut into cubes
- 1 lb clams, scrubbed and cleaned
- 4 garlic cloves, minced
- 1/2 cup white wine
- 2 bay leaves
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 cup fresh cilantro, chopped
- 4 large potatoes, peeled and cut into cubes
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a bowl, combine the pork cubes with the minced garlic, white wine, paprika, cumin, and half of the chopped cilantro. Let it marinate for at least 30 minutes.
- In a large pan, heat the olive oil over medium-high heat. Add the marinated pork and cook until browned on all sides.
- Add the potatoes and bay leaves to the pan. Season with salt and pepper, and cook for about 15 minutes, stirring occasionally.
- Add the clams to the pan and cover with a lid. Cook for another 10-15 minutes or until the clams have opened.
- Sprinkle the remaining cilantro over the dish before serving.
