Carne de Porco à Alentejana (Alentejo-Style Pork)

Ingredients

  • 1 lb pork loin, cut into cubes
  • 1 lb clams, scrubbed and cleaned
  • 4 garlic cloves, minced
  • 1/2 cup white wine
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 cup fresh cilantro, chopped
  • 4 large potatoes, peeled and cut into cubes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a bowl, combine the pork cubes with the minced garlic, white wine, paprika, cumin, and half of the chopped cilantro. Let it marinate for at least 30 minutes.
  2. In a large pan, heat the olive oil over medium-high heat. Add the marinated pork and cook until browned on all sides.
  3. Add the potatoes and bay leaves to the pan. Season with salt and pepper, and cook for about 15 minutes, stirring occasionally.
  4. Add the clams to the pan and cover with a lid. Cook for another 10-15 minutes or until the clams have opened.
  5. Sprinkle the remaining cilantro over the dish before serving.
