Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the beef with salt, pepper, cumin, and paprika.
  2. Heat the vegetable oil in a large pot over medium-high heat. Sear the beef on all sides until browned. Remove the beef and set aside.
  3. In the same pot, sauté the onion, garlic, and bell pepper until softened.
  4. Stir in the diced tomato and cook for 2 minutes.
  5. Return the beef to the pot and add the beef broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender and easily shreds with a fork.
  6. Shred the beef using two forks and continue to cook in the sauce for an additional 15 minutes.
  7. Adjust the seasoning with salt and pepper if needed.
