Carnevale Corso, also known as Corsican Carnival, is a traditional festival in Corsica, an island in the Mediterranean Sea. To celebrate this festive occasion, we have a delicious recipe that captures the flavors of Southern European cuisine.
Ingredients
- 1 lb beef, cubed
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup red wine
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.

- Pour in the red wine and let it simmer for 5 minutes.

- Once the beef is tender and the flavors have melded, the dish is ready to serve.
