Carnitas, which translates to "little meats," is a traditional Mexican dish of braised and then roasted pork. This recipe will guide you through making authentic carnitas that are juicy and flavorful.
Ingredients
- 4 lbs pork shoulder, cut into 2-inch pieces
- 1 orange, juiced
- 1 lime, juiced
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 tsp ground cumin
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, combine the pork, orange juice, lime juice, garlic, onion, cumin, oregano, salt, and pepper.
- Add enough water to cover the pork.
- Bring the pot to a boil, then reduce the heat to a simmer and cook for 2 hours, stirring occasionally.
- Once the liquid has evaporated, increase the heat to medium-high and cook until the pork is browned and crispy.
- Remove from the heat and let the pork rest for 5 minutes before serving.
