Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, chopped
  • 1 small onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil. Slowly whisk in the grits and reduce the heat to low. Cook for 20 minutes, stirring occasionally.
  2. While the grits are cooking, heat a skillet over medium heat and cook the bacon until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are tender.
  5. Pour in the chicken broth and bring to a simmer. Stir in the butter and season with salt and pepper.
  6. Once the grits are creamy, stir in the cheddar cheese until melted. Serve the grits in bowls, topped with the shrimp and vegetable mixture. Garnish with the crispy bacon.
