Carolina Shrimp and Grits is a classic dish from Mecklenburg cuisine, known for its rich flavors and comforting appeal.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups water
- 1 cup shredded cheddar cheese
- 4 slices bacon, chopped
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil. Slowly whisk in the grits and reduce the heat to low. Cook for 20 minutes, stirring occasionally.
- While the grits are cooking, heat a skillet over medium heat and cook the bacon until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are tender.
- Pour in the chicken broth and bring to a simmer. Stir in the butter and season with salt and pepper.
- Once the grits are creamy, stir in the cheddar cheese until melted. Serve the grits in bowls, topped with the shrimp and vegetable mixture. Garnish with the crispy bacon.
