Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 3/4 cup vegetable oil
- 4 eggs
- 2 cups grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Stir in the vegetable oil and eggs until well blended.
- Fold in the grated carrots, walnuts, raisins, and vanilla extract.
- Pour the batter into the prepared pan and spread evenly.
- Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
- Once cooled, frost with cream cheese frosting if desired.
