Carrot Cake (torta De Zanahoria)

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Stir in the vegetable oil and eggs until well blended.
  4. Fold in the grated carrots, walnuts, raisins, and vanilla extract.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
  8. Once cooled, frost with cream cheese frosting if desired.
