Ingredients

  • 4 cups grated carrots
  • 4 cups full-fat milk
  • 1 cup sugar
  • 4 tbsp ghee
  • 1/2 tsp cardamom powder
  • 2 tbsp chopped nuts (almonds, cashews, pistachios)

Instructions

  1. Heat ghee in a heavy-bottomed pan and add the grated carrots. Sauté for 5 minutes.
  2. Pour in the milk and cook the carrots on medium heat until the milk is reduced to half, stirring occasionally.
  3. Add sugar and cardamom powder, and continue to cook until the mixture thickens and the carrots are soft.
  4. Garnish with chopped nuts and serve hot or cold.
