Ingredients
- 4 cups grated carrots
- 4 cups full-fat milk
- 1 cup sugar
- 4 tbsp ghee
- 1/2 tsp cardamom powder
- 2 tbsp chopped nuts (almonds, cashews, pistachios)
Instructions
- Heat ghee in a heavy-bottomed pan and add the grated carrots. Sauté for 5 minutes.
- Pour in the milk and cook the carrots on medium heat until the milk is reduced to half, stirring occasionally.
- Add sugar and cardamom powder, and continue to cook until the mixture thickens and the carrots are soft.
- Garnish with chopped nuts and serve hot or cold.
