Ingredients

  • 1 kg carrots, grated
  • 1 liter whole milk
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup mixed nuts and dried fruits (such as almonds, cashews, and raisins)
  • 1/2 tsp cardamom powder

Instructions

  1. Heat ghee in a heavy-bottomed pan and add the grated carrots.
  2. Sauté the carrots for 5-7 minutes until they turn soft and the raw smell disappears.
  3. Pour in the milk and cook on medium heat, stirring occasionally, until the carrots are cooked and the milk is reduced to half.
  4. Add sugar and cardamom powder, and continue to cook until the mixture thickens.
  5. Finally, add the mixed nuts and dried fruits, and cook for another 5 minutes.
  6. Carrot pudding is ready to be served hot or cold.
