Ingredients
- 1 kg carrots, grated
- 1 liter whole milk
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup mixed nuts and dried fruits (such as almonds, cashews, and raisins)
- 1/2 tsp cardamom powder
Instructions
- Heat ghee in a heavy-bottomed pan and add the grated carrots.
- Sauté the carrots for 5-7 minutes until they turn soft and the raw smell disappears.
- Pour in the milk and cook on medium heat, stirring occasionally, until the carrots are cooked and the milk is reduced to half.
- Add sugar and cardamom powder, and continue to cook until the mixture thickens.
- Finally, add the mixed nuts and dried fruits, and cook for another 5 minutes.
- Carrot pudding is ready to be served hot or cold.
