Ingredients
- 6 large carrots, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté until they are soft and translucent.
- Add the chopped carrots, ground cumin, and ground coriander to the pot. Stir well to coat the carrots with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the carrots are tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches.
- Stir in the coconut milk and season the soup with salt and pepper to taste.
- Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
- Serve the spiced carrot soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground cumin.
