Ingredients
- 1 lb boneless, skinless chicken breasts, cut into small cubes
- 1 cup cashews
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup snow peas
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- Salt and pepper to taste

Instructions
- In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and chicken broth. Set aside.
- Heat cooking oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
- Add the bell peppers and snow peas, and stir-fry for a few minutes until slightly tender.
- Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables. Stir well to coat everything in the sauce.
- Simmer for a few minutes until the sauce thickens and the chicken and vegetables are fully coated.
- Stir in the cashews and green onions. Season with salt and pepper to taste.
- Remove from heat and serve hot over steamed rice.
