Cashew Chicken (腰果鸡丁)

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into small cubes
  • 1 cup cashews
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup snow peas
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and chicken broth. Set aside.
  2. Heat cooking oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
  4. Add the bell peppers and snow peas, and stir-fry for a few minutes until slightly tender.
  5. Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables. Stir well to coat everything in the sauce.
  6. Simmer for a few minutes until the sauce thickens and the chicken and vegetables are fully coated.
  7. Stir in the cashews and green onions. Season with salt and pepper to taste.
  8. Remove from heat and serve hot over steamed rice.
