Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup unsalted cashews
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and stir-fry for 30 seconds.
- Add shrimp to the pan and stir-fry until they turn pink, about 2-3 minutes.
- Add diced red bell pepper and cashews to the pan, and stir-fry for an additional 2 minutes.
- Pour the sauce mixture over the shrimp, cashews, and bell pepper. Stir well to coat everything evenly and cook for another 2 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Remove from heat and serve hot over steamed rice.
