Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup unsalted cashews
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and stir-fry for 30 seconds.
  3. Add shrimp to the pan and stir-fry until they turn pink, about 2-3 minutes.
  4. Add diced red bell pepper and cashews to the pan, and stir-fry for an additional 2 minutes.
  5. Pour the sauce mixture over the shrimp, cashews, and bell pepper. Stir well to coat everything evenly and cook for another 2 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot over steamed rice.
