Ingredients

  • 2 lbs cassava, peeled and cut into chunks
  • 1 cup unsalted peanuts

  • 1 inch ginger, grated
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 4 cups vegetable broth

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the tomatoes, ground coriander, cumin, and cayenne pepper. Cook for a few minutes until the tomatoes break down and the spices are fragrant.
  3. Add the cassava, peanuts, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the cassava is tender.
