Ingredients
- 2 cups grated cassava
- 1 cup chopped spinach
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/4 cup all-purpose flour
- Oil for frying
Instructions
- In a large bowl, combine the grated cassava, chopped spinach, onion, garlic, paprika, cayenne pepper, salt, and black pepper.
- In a separate bowl, beat the eggs and then add them to the cassava and spinach mixture. Stir until well combined.
- Sprinkle the flour over the mixture and stir until the flour is fully incorporated.

- Scoop spoonfuls of the cassava and spinach mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
