Ingredients
- 2 cups grated cassava
- 1 onion, finely chopped
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
- 4 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 green chili, chopped
- 1/2 teaspoon cayenne pepper
- 1 tablespoon sugar
- Salt to taste
Instructions
- In a large bowl, mix the grated cassava, chopped onion, cornstarch, salt, and black pepper to form a thick batter.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the cassava batter into the hot oil and fry until golden brown and crispy. Drain on paper towels.
- In a separate saucepan, combine the chopped tomatoes, minced garlic, grated ginger, chopped green chili, cayenne pepper, sugar, and salt. Cook over medium heat, stirring occasionally, until the tomatoes break down and the chutney thickens.
- Serve the cassava fritters with the spicy tomato chutney on the side.
