Ingredients
- 2 lbs cassava leaves
- 1 lb meat (chicken, beef, or fish)

- 1 tsp red palm oil
- Salt and pepper to taste
Instructions
- Wash the cassava leaves and remove any tough stems.
- Cut the meat into small pieces and season with salt and pepper.
- In a large pot, heat the red palm oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the seasoned meat and cook until browned.
- Stir in the cassava leaves, ground crayfish, and enough water to cover the ingredients.
- Simmer for 1 hour, stirring occasionally, until the leaves are tender and the flavors have melded together.
- Adjust seasoning with salt and pepper, if needed.
- Serve hot with rice or fufu.
