Ingredients

  • 2 lbs cassava leaves, washed and finely chopped
  • 2 lbs meat (chicken, beef, or goat), cut into bite-sized pieces
  • 1 cup palm oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 Maggi cubes (or bouillon cubes)
  • 1 hot pepper, chopped (optional)
  • Salt to taste

Instructions

  1. Place the meat in a large pot and add enough water to cover it. Bring to a boil and cook until the meat is tender, about 1 hour.
  2. Add the cassava leaves, palm oil, onion, garlic, ginger, Maggi cubes, and hot pepper to the pot with the meat. Stir well to combine.
  3. Simmer the stew over medium heat for 1 hour, stirring occasionally and adding water if needed to prevent sticking.
  4. Season with salt to taste and serve hot with rice or fufu.
