Ingredients
- 2 lbs cassava leaves, washed and finely chopped
- 2 lbs meat (chicken, beef, or goat), cut into bite-sized pieces
- 1 cup palm oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 Maggi cubes (or bouillon cubes)
- 1 hot pepper, chopped (optional)
- Salt to taste
Instructions
- Place the meat in a large pot and add enough water to cover it. Bring to a boil and cook until the meat is tender, about 1 hour.
- Add the cassava leaves, palm oil, onion, garlic, ginger, Maggi cubes, and hot pepper to the pot with the meat. Stir well to combine.
- Simmer the stew over medium heat for 1 hour, stirring occasionally and adding water if needed to prevent sticking.
- Season with salt to taste and serve hot with rice or fufu.
