Cassava Leaf Stew Supreme is a traditional dish from Sierra Leone that is rich in flavor and packed with nutrients. This hearty stew is made with cassava leaves, a staple in West African cuisine, and is typically served with rice or fufu.
Ingredients
- 2 lbs cassava leaves, washed and finely chopped
- 1 lb meat (chicken, beef, or fish), cut into bite-sized pieces
- 1 cup palm oil
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 cup peanut butter
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the meat and cook until browned on all sides.
- Stir in the diced tomatoes and cook for 5 minutes.
- Add the cassava leaves and broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes.
- In a small bowl, mix the peanut butter with some of the hot broth to create a smooth paste. Stir the peanut butter mixture into the stew.
- Season with salt and pepper to taste.
