Cassava Leaf Stew Supreme

Ingredients

  • 2 lbs cassava leaves, washed and finely chopped
  • 1 lb meat (chicken, beef, or fish), cut into bite-sized pieces
  • 1 cup palm oil
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1 cup peanut butter
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the meat and cook until browned on all sides.
  4. Stir in the diced tomatoes and cook for 5 minutes.
  5. Add the cassava leaves and broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. In a small bowl, mix the peanut butter with some of the hot broth to create a smooth paste. Stir the peanut butter mixture into the stew.
  7. Season with salt and pepper to taste.
  8. Serve the Cassava Leaf Stew Supreme hot with rice or fufu.
