Ingredients
- 2 lbs cassava leaves, washed and chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 cup peanut butter

- 1/2 tsp cayenne pepper
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.

- Add the cassava leaves to the pot and pour in the vegetable broth.
- Simmer the stew for 45 minutes, stirring occasionally.

- Stir the peanut butter paste into the stew until well combined.
- Season the stew with salt, black pepper, and cayenne pepper, adjusting to taste.
