Ingredients

  • 2 lbs cassava leaves, washed and chopped
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1 cup peanut butter
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the diced tomatoes and cook for 5 minutes.
  4. Add the cassava leaves to the pot and pour in the vegetable broth.
  5. Simmer the stew for 45 minutes, stirring occasionally.
  6. In a small bowl, mix the peanut butter with some of the hot broth from the stew to create a smooth paste.
  7. Stir the peanut butter paste into the stew until well combined.
  8. Season the stew with salt, black pepper, and cayenne pepper, adjusting to taste.
