Cassava Pancakes with Avocado Salsa (Inyota ye Igitoke n'Isalsa ye Avocado)

Ingredients

  • 2 cups cassava flour
  • 1 cup water
  • 1 ripe avocado, diced
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
