Cassava Pone Extravaganza

Ingredients

  • 3 cups grated cassava
  • 1 cup grated coconut
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1/2 cup raisins
  • 1/4 cup chopped almonds
  • 1/4 cup chopped cherries
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated cassava, grated coconut, brown sugar, melted butter, raisins, almonds, cherries, cinnamon, nutmeg, vanilla extract, and salt. Mix well.
  3. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  4. Bake in the preheated oven for 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  5. Allow the cassava pone to cool before slicing and serving.
