Cassava Pone is a traditional Guyanese dessert made from grated cassava, coconut, and spices. This recipe takes the classic dish to the next level with a few extra ingredients for an extravagant twist.
Ingredients
- 3 cups grated cassava
- 1 cup grated coconut
- 1 cup brown sugar
- 1/2 cup melted butter
- 1/2 cup raisins
- 1/4 cup chopped almonds
- 1/4 cup chopped cherries
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the grated cassava, grated coconut, brown sugar, melted butter, raisins, almonds, cherries, cinnamon, nutmeg, vanilla extract, and salt. Mix well.
- Pour the mixture into the prepared baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cassava pone to cool before slicing and serving.
