Ingredients

  • 2 lbs cassava, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 6 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the cassava, scotch bonnet pepper, and vegetable broth to the pot.
  3. Simmer for 30 minutes or until the cassava is tender.
  4. Remove the scotch bonnet pepper and discard.
  5. Stir in the coconut milk, ground cumin, and ground coriander.
  6. Season with salt and pepper to taste.
  7. Simmer for an additional 10 minutes.
  8. Remove from heat and let the soup cool slightly before serving.
