Ingredients
- 2 lbs cassava, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 6 cups vegetable broth
- 1 cup coconut milk
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the cassava, scotch bonnet pepper, and vegetable broth to the pot.
- Simmer for 30 minutes or until the cassava is tender.
- Remove the scotch bonnet pepper and discard.
- Stir in the coconut milk, ground cumin, and ground coriander.
- Season with salt and pepper to taste.
- Simmer for an additional 10 minutes.
- Remove from heat and let the soup cool slightly before serving.
