Ingredients
- 1 pound spicy Italian sausage, casings removed
- 1 cup polenta
- 4 cups water

- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) crushed tomatoes

- 1 cup shredded mozzarella cheese
Instructions
- In a large pot, bring 4 cups of water to a boil. Gradually whisk in the polenta, reduce heat to low, and cook for 25-30 minutes, stirring frequently, until thickened.
- Stir in the Parmesan cheese, black pepper, and parsley. Pour the polenta into a greased 9x13 inch baking dish and spread it out evenly. Let it cool and set while preparing the sausage mixture.
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
- Add the sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 8-10 minutes.
- Stir in the crushed tomatoes, oregano, and red pepper flakes. Simmer for 5 minutes, then remove from heat.
- Spoon the sausage mixture over the polenta in the baking dish. Sprinkle the mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
