  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, bring 4 cups of water to a boil. Gradually whisk in the polenta, reduce heat to low, and cook for 25-30 minutes, stirring frequently, until thickened.
  2. Stir in the Parmesan cheese, black pepper, and parsley. Pour the polenta into a greased 9x13 inch baking dish and spread it out evenly. Let it cool and set while preparing the sausage mixture.
  3. Preheat the oven to 375°F (190°C).
  4. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
