  • 1 cup breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned. Remove the sausage from the pot and set aside.
  2. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
  3. Add the cannellini beans, diced tomatoes, chicken broth, bay leaves, thyme, and the cooked sausage back into the pot. Season with salt and pepper.
  4. Simmer the cassoulet for 1.5 hours, stirring occasionally, until the flavors have melded together.
  5. Preheat the oven to 375°F (190°C). Transfer the cassoulet to a baking dish and sprinkle the breadcrumbs on top.
  6. Bake for 20 minutes, or until the breadcrumbs are golden brown.
