- 2 cups chicken broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
- Add the cannellini beans, diced tomatoes, chicken broth, bay leaves, thyme, and the cooked sausage back into the pot. Season with salt and pepper.
- Simmer the cassoulet for 1.5 hours, stirring occasionally, until the flavors have melded together.
- Preheat the oven to 375°F (190°C). Transfer the cassoulet to a baking dish and sprinkle the breadcrumbs on top.
- Bake for 20 minutes, or until the breadcrumbs are golden brown.
