Cassoulet: Slow-cooked White Bean Stew
Cassoulet is a traditional Occitan dish that is a slow-cooked white bean stew with meat, typically pork or duck, and sausage. It is a hearty and comforting dish perfect for a cozy night in.
Ingredients
- 1 lb dried white beans
- 4 slices bacon, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 4 pork sausages
- 4 duck legs
- 2 cups chicken broth
- 1 can diced tomatoes
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Soak the white beans in water overnight.
- In a large pot, cook the bacon until crispy. Add the onion and garlic, and cook until softened.
- Add the sausages and duck legs to the pot and brown on all sides.
- Stir in the soaked white beans, chicken broth, diced tomatoes, bay leaves, thyme, salt, and pepper.
- Cover and simmer for 2-3 hours, stirring occasionally, until the beans are tender and the meat is falling off the bone.
- Remove the bay leaves and serve hot.
