Cassoulet: Slow-cooked White Bean Stew

Ingredients

  • 1 lb dried white beans
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 pork sausages
  • 4 duck legs
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Soak the white beans in water overnight.
  2. In a large pot, cook the bacon until crispy. Add the onion and garlic, and cook until softened.
  3. Add the sausages and duck legs to the pot and brown on all sides.
  4. Stir in the soaked white beans, chicken broth, diced tomatoes, bay leaves, thyme, salt, and pepper.
  5. Cover and simmer for 2-3 hours, stirring occasionally, until the beans are tender and the meat is falling off the bone.
  6. Remove the bay leaves and serve hot.
