Ingredients
- 1 pound dried white beans
- 4 duck legs
- 1 pound pork shoulder, cut into chunks
- 1/2 pound slab bacon, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 1 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Soak the white beans in water overnight.
- In a large pot, brown the duck legs, pork shoulder, and bacon over medium heat.
- Add the onion, garlic, and tomatoes to the pot and cook until the onions are soft.
- Stir in the soaked white beans, bay leaves, thyme, black pepper, and chicken broth.
- Simmer the cassoulet for 2 hours, stirring occasionally.
- Preheat the oven to 350°F (175°C).
- Transfer the cassoulet to a large casserole dish and top with breadcrumbs mixed with olive oil.
- Bake for 1 hour, or until the top is golden and crispy.
