Ingredients
- 1 lb cod fish fillets, cut into chunks
- 2 onions, chopped
- 3 tomatoes, diced
- 1 red bell pepper, sliced
- 2 garlic cloves, minced
- 1/4 cup olive oil
- 1 cup fish or vegetable broth
- 1/2 cup white wine
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Stir in the tomatoes, bay leaf, and white wine. Cook for 5 minutes.
- Pour in the broth and bring the mixture to a simmer.
- Add the cod fish chunks to the pot and season with salt and pepper.
- Cover and let the stew simmer for 30-40 minutes, or until the fish is cooked through.
- Remove the bay leaf before serving.
