Catalan Cod Fish Stew (Estofat de Bacallà Català)

Ingredients

  • 1 lb cod fish fillets, cut into chunks
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 1 red bell pepper, sliced
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 cup fish or vegetable broth
  • 1/2 cup white wine
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, and red bell pepper. Sauté until the vegetables are softened.
  3. Stir in the tomatoes, bay leaf, and white wine. Cook for 5 minutes.
  4. Pour in the broth and bring the mixture to a simmer.
  5. Add the cod fish chunks to the pot and season with salt and pepper.
  6. Cover and let the stew simmer for 30-40 minutes, or until the fish is cooked through.
  7. Remove the bay leaf before serving.
