Ingredients
- 1 whole rabbit, cut into pieces
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 cup dry white wine
- 2 cups chicken broth
- 2 bay leaves
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the rabbit pieces with salt, pepper, and paprika.
- Heat the olive oil in a large pot over medium-high heat. Brown the rabbit pieces on all sides, then remove and set aside.
- Lower the heat to medium and add the onions, garlic, and red bell pepper to the pot. Cook until softened.
- Add the diced tomatoes, thyme, and bay leaves. Cook for a few minutes until the tomatoes break down.
- Pour in the white wine and let it simmer for a couple of minutes to reduce slightly.
- Return the rabbit pieces to the pot and pour in the chicken broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, until the rabbit is tender.
- Adjust the seasoning with salt and pepper, then serve the Conill Estofat Estil Català hot, with your choice of side dishes.
