Catalan-style Grilled Pork Ribs (Costelles de Porc a la Brasa Estil Català)
Costelles de Porc a la Brasa Estil Català, or Catalan-style Grilled Pork Ribs, is a traditional dish from Andorran cuisine that features succulent pork ribs marinated in a flavorful blend of herbs and spices, then grilled to perfection.
Ingredients
- 2 kg pork ribs
- 4 cloves garlic, minced
- 2 tsp paprika
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together the minced garlic, paprika, cayenne pepper, olive oil, salt, and pepper to create the marinade.
- Place the pork ribs in a large dish and rub the marinade all over the ribs, ensuring they are evenly coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the ribs from the marinade and grill for 30-40 minutes, turning occasionally, until the ribs are cooked through and charred on the outside.
- Once cooked, remove the ribs from the grill and let them rest for a few minutes before serving.
