Ingredients
- 250g fideuà noodles
- 300g mixed seafood (shrimp, squid, mussels)
- 1 onion, finely chopped
- 2 tomatoes, grated
- 2 garlic cloves, minced
- 1 liter fish or seafood broth
- 1 teaspoon sweet paprika
- Extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large paella pan or wide, shallow skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the grated tomatoes and sweet paprika, and cook for a few minutes.
- Add the fideuà noodles to the pan and stir to coat them with the tomato mixture.
- Pour in the fish or seafood broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low and let the noodles simmer for about 10 minutes, stirring occasionally.
- Once the noodles are almost cooked, add the mixed seafood to the pan and continue to cook until the seafood is fully cooked.
- Remove the pan from the heat and let the fideuà rest for a few minutes before serving.
