Catalan-style Seafood Fideuà (Fideuà de Marisc Estil Català)

Ingredients

  • 250g fideuà noodles
  • 300g mixed seafood (shrimp, squid, mussels)
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 2 garlic cloves, minced
  • 1 liter fish or seafood broth
  • 1 teaspoon sweet paprika
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large paella pan or wide, shallow skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the grated tomatoes and sweet paprika, and cook for a few minutes.
  4. Add the fideuà noodles to the pan and stir to coat them with the tomato mixture.
  5. Pour in the fish or seafood broth, season with salt and pepper, and bring to a boil.
  6. Reduce the heat to low and let the noodles simmer for about 10 minutes, stirring occasionally.
  7. Once the noodles are almost cooked, add the mixed seafood to the pan and continue to cook until the seafood is fully cooked.
  8. Remove the pan from the heat and let the fideuà rest for a few minutes before serving.
