Ingredients
- 500g mixed seafood (shrimp, clams, mussels)
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tomatoes, diced
- 200ml white wine
- 100ml fish stock
- 2 tablespoons olive oil
- 1 bay leaf
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a cataplana or large pot over medium heat.
- Add the onions, garlic, and bell peppers. Sauté until the vegetables are softened.
- Add the tomatoes, bay leaf, and white wine. Simmer for 5 minutes.
- Add the seafood and fish stock. Cover and cook for 10-15 minutes or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
