Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup hummus
  • 1/4 cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. Assemble the bowls by dividing the quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives between two bowls.
  3. Top each bowl with crumbled feta cheese, if using, and drizzle with hummus and tzatziki sauce.
