Cawl Dewi Sant (st David's Stew)

Ingredients
- 2 lbs lamb, cut into chunks
- 4 large potatoes, peeled and diced
- 2 leeks, sliced
- 3 carrots, sliced
- 1 small turnip, diced
- 1 onion, chopped
- 1/4 cup pearl barley
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the onions and cook until softened.
- Add the potatoes, leeks, carrots, turnip, and pearl barley to the pot.
- Pour in enough water to cover the ingredients and add the bay leaf.
- Season with salt and pepper, then bring to a boil.
- Reduce the heat and simmer for 2 hours, stirring occasionally.
- Remove the bay leaf before serving.
