Ingredients

  • 2 leeks, white and light green parts only, thinly sliced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 4 slices of bread, toasted

Instructions

  1. Melt the butter in a saucepan over medium heat. Add the leeks and cook until softened, about 5 minutes.
  2. Sprinkle the flour over the leeks and stir to combine. Cook for 1-2 minutes.
  3. Gradually whisk in the milk, mustard, Worcestershire sauce, and paprika. Cook, stirring constantly, until the mixture thickens.
  4. Remove the saucepan from the heat and stir in the cheddar cheese until melted and smooth. Season with salt and pepper.
  5. Place the toasted bread on serving plates and spoon the cheese and leek mixture over the top.
