Ingredients
- 2 tablespoons unsalted butter
- 2 leeks, white and light green parts only, thinly sliced
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon paprika
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
- 4 slices of bread, toasted
Instructions
- Melt the butter in a saucepan over medium heat. Add the leeks and cook until softened, about 5 minutes.
- Sprinkle the flour over the leeks and stir to combine. Cook for 1-2 minutes.
- Gradually whisk in the milk, mustard, Worcestershire sauce, and paprika. Cook, stirring constantly, until the mixture thickens.
- Remove the saucepan from the heat and stir in the cheddar cheese until melted and smooth. Season with salt and pepper.
- Place the toasted bread on serving plates and spoon the cheese and leek mixture over the top.
