Ingredients
- 4 snapper fillets
- 1 cup all-purpose flour

- 1 bell pepper, sliced

- 1 scotch bonnet pepper, sliced
- 1 cup white vinegar
- 1 tablespoon sugar
- 1 teaspoon allspice berries
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 bay leaf
Instructions
- In a bowl, mix the flour, salt, and black pepper. Dredge the snapper fillets in the seasoned flour.
- Heat the vegetable oil in a skillet over medium-high heat. Fry the snapper fillets until golden brown and crispy, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the onion, bell pepper, carrot, and scotch bonnet pepper. Cook for 2-3 minutes until slightly softened.
- In a small saucepan, combine the white vinegar, sugar, allspice berries, black peppercorns, mustard seeds, and bay leaf. Bring to a simmer and cook for 5 minutes.
- Pour the hot vinegar mixture over the sautéed vegetables in the skillet. Let it simmer for another 2-3 minutes.
