Ingredients

  • 2 lobster tails, shells removed and chopped

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 4 cups fish stock
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the butter and olive oil over medium heat.
  2. Add the chopped lobster tails and cook until they turn pink, about 5 minutes.
  3. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 10 minutes.
  4. Stir in the tomato paste, paprika, and cayenne pepper. Cook for 2 minutes.
  5. Pour in the fish stock and bring the mixture to a boil. Reduce heat and let it simmer for 30 minutes.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in the heavy cream and season with salt and pepper. Simmer for an additional 10 minutes.
