Ingredients
- 2 lobster tails, shells removed and chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 4 cups fish stock
- 1 cup heavy cream
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the butter and olive oil over medium heat.
- Add the chopped lobster tails and cook until they turn pink, about 5 minutes.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 10 minutes.
- Stir in the tomato paste, paprika, and cayenne pepper. Cook for 2 minutes.
- Pour in the fish stock and bring the mixture to a boil. Reduce heat and let it simmer for 30 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper. Simmer for an additional 10 minutes.
