Caymanian Fish Tea

Ingredients

  • 1 lb white fish fillets, such as snapper or grouper
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, whole
  • 1 sprig thyme
  • 2 bay leaves
  • 6 cups fish or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp fresh lime juice

Instructions

  1. In a large pot, bring the fish or vegetable broth to a simmer over medium heat.
  2. Add the tomatoes, onion, garlic, bell pepper, scotch bonnet pepper, thyme, and bay leaves to the pot.
  3. Gently place the fish fillets into the simmering broth and cook for 10-15 minutes, or until the fish is cooked through.
  4. Remove the fish from the pot and set aside. Discard the scotch bonnet pepper, thyme sprig, and bay leaves.
  5. Using a fork, flake the fish into bite-sized pieces and return it to the pot.
  6. Stir in the fresh lime juice and season with salt and pepper to taste.
  7. Serve the Caymanian Fish Tea hot, garnished with fresh herbs if desired.
