Caymanian Turtle Stew

Ingredients

  • 2 lbs turtle meat, diced
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 scotch bonnet pepper, whole
  • 2 sprigs thyme
  • 2 bay leaves
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the diced turtle meat to the pot and brown on all sides.
  3. Stir in the tomatoes, bell pepper, carrots, and potatoes. Add the scotch bonnet pepper, thyme, and bay leaves.
  4. Pour in the water and season with salt and pepper. Bring the stew to a boil, then reduce the heat and let it simmer for 2 hours, or until the turtle meat is tender.
  5. Once cooked, remove the scotch bonnet pepper, thyme sprigs, and bay leaves before serving.
