Caymanian Turtle Stew

Ingredients
- 2 lbs turtle meat, diced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 scotch bonnet pepper, whole
- 2 sprigs thyme
- 2 bay leaves
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the diced turtle meat to the pot and brown on all sides.
- Stir in the tomatoes, bell pepper, carrots, and potatoes. Add the scotch bonnet pepper, thyme, and bay leaves.
- Pour in the water and season with salt and pepper. Bring the stew to a boil, then reduce the heat and let it simmer for 2 hours, or until the turtle meat is tender.
- Once cooked, remove the scotch bonnet pepper, thyme sprigs, and bay leaves before serving.
